GOOD RETAIL PRACTICES

Good Retail Practices (GRPs) are preventive measures that include practices and procedures that effectively control the introduction of pathogens, chemicals and physical objects into food. If GRPs are not implemented, they could contribute to foodborne illness.

WAREWASHING FACILITIES – INSTALLED, MAINTAINED, USED; TEST STRIPS AVAILABLE

Examples violating good retail practices include lack of plugs/stoppers to fill up the warewashing sink, lack of testing strips/equipment for warewashing sanitizer or drain boards for dishwashing machine are used for storing equipment.

REQUIREMENTS

  • Food facilities that prepare food shall be equipped with warewashing facilities. Testing equipment and materials shall be provided to measure the applicable sanitation method [§114067(f-g), §114099, §114099.3, §114099.5, §114101(a), §114101.1, §114101.2, §114103, §114107, §114125]
