GOOD RETAIL PRACTICES

Good Retail Practices (GRPs) are preventive measures that include practices and procedures that effectively control the introduction of pathogens, chemicals and physical objects into food. If GRPs are not implemented, they could contribute to foodborne illness.

WIPING CLOTHS – PROPERLY USED, STORED

Examples violating good retail practices include wet wiping cloths that are used repeatedly but are not held in an approved sanitizing solution or sponges that are used in contact with cleaned and sanitized utensils.

REQUIREMENTS

  • Wiping cloths used to wipe service counters, scales or other surfaces that may come in contact with food shall be used only once unless kept in clean water with sanitizer [§114135, §114185.1, §114185.3(d-e)]
