GOOD RETAIL PRACTICES
Good Retail Practices (GRPs) are preventive measures that include practices and procedures that effectively control the introduction of pathogens, chemicals and physical objects into food. If GRPs are not implemented, they could contribute to foodborne illness.
THERMOMETERS – PROVIDED, ACCURATE
Examples violating good retail practices include a refrigerator holding PHFs without a working thermometer or a probe thermometer that is not calibrated.
REQUIREMENTS
- An accurate easily readable metal probe thermometer suitable for measuring temperature of food shall be available to the food handler (§114157, §114159)
- A thermometer accurate to +/- 2°F shall be provided for each hot and cold holding unit of potentially hazardous foods and high temperature warewashing machines (§114157, §114159)
