MINOR VIOLATIONS

Minor violations do not directly cause foodborne illness, but are important factors in providing safe, wholesome and unadulterated food products. A minor violation does not pose an imminent health hazard, but if not corrected could possibly lead to an imminent health hazard.

TIME AS A PUBLIC HEALTH CONTROL

Examples of minor violations include written procedures not maintained for food that was prepared, cooked and refrigerated when using Time as a Public Health Control (§114000)

REQUIREMENTS

  • When time only, rather than time and temperature is used as a public health control, records and documentation must be maintained (§114000)
  • Food that have been removed from temperature control must be marked or otherwise identified to indicate four hours past the point in time when the food was removed from temperature control (§114000)
  • Written procedures must be maintained and available for the food that has been prepared, cooked, and refrigerated when using Time as a Public Health Control (§114000)

EXCEPTIONS

  • Time as a Public Health Control cannot be used for raw eggs in licensed healthcare facilities or in public and private school cafeterias (§114000)
